Cauliflower Fried ‘Rice’ That Will Change Your Life

Since graduating from college I have been in a total reset mode. Resetting my old room, resetting my sleep cycle, resetting my workout schedule, and most importantly resetting my diet.

Now for me, I have never loved being on a diet. Ok, so who does?! But when you are looking to shed some pounds and don’t have time to exercise for hours on end what else can you do but subject yourself to a bowl of steamed veggies for every meal?!

I’ll tell you what…Get creative! Or at least let me be creative for you…

Don’t you just love that moment when you come across something that just changes your life. Well for a foodie like me, that seems to happens a lot when I’m at Trader Joe’s. (Their new Muhammara dip is simply magical.)

But the other day I came across a little something at Trader Joe’s that made me so excited I could have ran straight home to my kitchen, but obviously that would be stealing. Pre-Riced Cauliflower! If you have no idea what riced cauliflower is than it is now time to welcome it into your life.

Riced cauliflower is a beautiful thing. It can be substituted for rice, like I’ll show you below, and can even be used as a pizza crust! I don’t like being tricked, unless it’s by cauliflower.

With the right added flavors you’ll find yourself eating a bowl of vegetables without even knowing it! And personally, if I’m going to be on a ‘diet’ I’d prefer to not know about it.

Cauliflower Fried ‘Rice’

1 Tbsp Extra Virgin Olive Oil

Cauliflower Rice-I used one bag of pre-made Organic Cauliflower Rice from Trader Joe’s, trust me it will make your life easier! (If you want to make your own go here.)

1/2 onion diced

2 cloves garlic, minced

1 cup broccoli, cut into small florets

1/2 cup frozen peas

1 Tbsp Sesame Oil

1 egg scrambled (optional)

Premade grilled chicken, diced (optional)

Low Sodium Soy Sauce as desired

In a larger frying pan or wok, add the EVOO and riced cauliflower. Stir and cook over medium heat for about three minutes.

Add the diced onion and minced garlic to the pan continue to cook, stirring the rice every couple of minutes. Add the chopped broccoli, peas, sesame oil and a dash of soy sauce.

In a separate small pan, lightly scramble the egg and add it to the rice. Add the pre-made grilled chicken if desired and continue to cook for a few more minutes until the peas are cooked through and the chicken is warm.

Add fresh cracked pepper and low sodium soy sauce as desired! Enjoy!
