Can you think of a food you just can’t live without? Well I can think of many, but when it comes to breakfast, oatmeal is a serious contender. Although I am all about losing the labels, I love learning about the different kinds of diets out there, both good and bad. Surprisingly enough, A LOT of my friends have been or are on the Paleo path, I even once gave it a spin about a year ago (clearly it didn’t last too long). But there are some things in this world I just cant live without, and it is unrealistic for me to cut food groups out completely. Sometimes I like following something like a Paleo diet for a day or two, but maybe it’s more of a mental challenge than anything.
For those who follow a Paleo diet, more power to you. If anything this post is dedicated to you, to give you a taste of something you might just be missing, or at least I would be! For those of you, like me, who still can enjoy your oats, try this recipe out! It’s a nice (and delicious) change of pace!
3/4 cup coconut milk
3 tbsp coconut flour
2 tbsp finely shredded coconut
1/2 mashed banana
In a small saucepan, mix together the milk, coconut flour and shredded coconut. Bring to a boil, cover, reduce to low, and simmer for 2-3 minutes, stirring occasional. Still on the heat, add the mashed banana and stir briefly. Serve with fruit and enjoy!
