Quick recap of my weekend: World Cup (yay Netherlands!), Food Trucks (nom), Bridesmaids (LOL), Nachos (oops), World Cup (GERMANY!!!). I would say it was pretty successful-and I am not even going to say minus the nachos because….hellooo being balanced over here!!!
I’m just going to elaborate on the nachos here, because I think its important and also a good example of what I mean by being balanced. So, for the World Cup final my friends and I decided to head over to the Yard House to enjoy the game. Well apparently everyone else in the greater Los Angeles area had the same idea because the place was packed. We stood the whole time in a crowd of primarily Argentina fans (it’s ok though I’m loud) which I was fine with because I didn’t get a workout in that morning (does standing for two hours count?) Anyways, all the suspense really made me ravenous, and my friends and I kept eying the delicious heaping plates of nachos that everyone in the restaurant seemed to be enjoying. Now, my restrictive self would have said NO WAY while spending the entire two hours fixating on the nachos rather than the game, salivating over their deliciousness, and thinking WHYYY MEEEE?! My binge side would have ordered a plate for myself, plus a beer to wash it down, and maybe even a dessert, cause hey it’s the World Cup! – but don’t forget I would have gone home and spent the rest of the day thinking WHY DID I EAT ALL THAT?! This time, I tried the balanced version and, you guessed it, it’s my favorite version yet! My friends and I split the nachos, and I stopped eating when I was full. If you are thinking, that’s it? Then the answer is yes! I enjoyed every bite without busting my goals, and didn’t wallow in guilt.
So the rest of my weekend was spent on track. I enjoyed some new and yummy breakfasts, did a couple of successful beach runs, found the last half of a yoga class on TV (which I did in my living room), got a much needed manicure, and of course my two favorite teams of the World Cup won their games (well besides the U.S. of course!)
I’ve been promising some new recipes on the insta, and here is one that IS SO DREAMMMMY. I went out to dinner at True Foods Kitchen, and ordered a delicious coconut banana chia seed pudding. I loved it so much that I decided to recreate it, cut out the sugar, and turn it into a tasty breakfast! P.S. I think it’s even better from home 😉
Coconut Banana Chia-Seed Pudding
1 cup coconut milk
1/4 cup chia seeds
1 tsp vanilla
2 bananas, frozen
1/4 cup unsweetened coconut shavings
Soak your chia seeds in the coconut milk and vanilla overnight. In the morning, blend the frozen bananas into an ice cream consistency. Mix the chia pudding with the nana ‘nice’cream until combined. Toast your coconut shavings in a pan over medium heat. Top the pudding with the slices of fresh banana and coconut.
