I’ve been watching a lot of the the World Cup recently and there is just something about it, and sports in general, that gets me craving some good old comfort foods. But there is no reason I cant find a way to make some yummy favorites healthy and nutritious! For dinner I turned my boring boneless skinless chicken breast into delicious (and fun) chicken tenders for the perfect futbol finger food! (I also turned my dijon mustard into a spicy honey mustard dipping sauce by adding some organic honey!)
Healthy Hemp and Panko Chicken Tenders
1 boneless skinless chicken breast (cut in strips)
1 tsp EV olive oil
1/2 cup egg whites
1/2 cup panko bread crumbs
1/2 cup hemp hearts (optional)
2 tsp garlic powder
salt and pepper to taste.
Cut the chicken into strips, and prepare the two bowls. In one bowl add the egg whites. In another bowl add the panko, hemp hearts, garlic powder, and salt and pepper. Using both hands dip the chicken in the egg white and then into the panko mixture. (To keep your hands from building a crust themselves use one hand for wet and one hand for dry.) Place the prepared strips on a plate.
Heat a skillet with the oil on medium-high and start pan frying the chicken. Once brown (about 5 minutes) flip the strips and cook until finished.
Enjoy with your favorite sauce and veggies!
