Juiceless Pops

My week of summer, so far, has consisted of long car rides, longer days at work, and a whole lot of sleep. my thrown off schedule has left me a bit frazzled and even longing for a more normal routine (not that I am all that eager to jump back into the next round of summer school or anything.) I guess you could say I am a bit off my usually vibe, possibly a reason I haven’t blogged in a couple of days. One thing I have tried to keep consistent however, are my healthy eating habits-my upcoming trip to Vegas for my roommate’s 21st is definitely a big motivating factor. I’ve been a little wishy-washy with working out, just because my schedule is so off that it’s hard to find the time, but that just means I’ve been a little more conscious of my intake. My run the other day, however left my longing for a nice cold Popsicle, however I wasn’t quite in the mood to make a fresh pressed juice. Luckily the yogurt in my fridge worked perfectly as a base and gave me an added boost of protein, perfect for a post workout treat!

Mango-Protein Pops

1/2 Mango, cubed

1/2 cup yogurt

1/2 cup almond milk

1 tsp vanilla

1/2 packet Stevia

Combine the yogurt and the almond milk to reach a thinner consistency. Add the vanilla and Stevia and stir. Cut the mango and add to the yogurt mixture. Pour mixture into Zoku popsicle maker, freeze for 10 minutes, and enjoy!
