For Father’s day (shoutout to my dad!) I journeyed home to the Bay Area from LA to surprise my family and spend the weekend. In between catching up with my friends from high school, spending time with my family, and cooking up a storm I failed to crack out my chemistry book to study for my upcoming exam (whoops!)
Now that I am back in Los Angeles I feel like I am playing a big game of catch up and my list of to-do’s just keeps adding up! In the shuffle of a full daily routine it’s easy to lose track of your health and fitness goals. cooking nutritious meals can seem daunting and time-consuming, but this week I have made it a point to find ways to make quick and easy meals that are still as nutritious!
My overnight oats are about the easiest and most delicious way to get in a nutritious breakfast. It is literally as easy as throwing ingredients in a jar and going to sleep! And the best part is, it is up to you what flavor you want! This morning I thoroughly enjoyed my bowl of blueberry breakfast oats topped with bananas, figs, freeze-dried raspberries, and blackberries!
Blueberry-Chia Breakfast Oats
1/3 cup gluten free rolled oats
1/3 cup almond milk
2 tbsp 0% greek yogurt
1/4 cup blueberries
1 tbsp honey or agave
1 tbsp chia seeds
1 tsp vanilla
1/2 tsp cinnamon
Place blueberries in a pan on medium heat. Stir the blueberries and cook until they are slightly broken down and their juices release.
Add all ingredients into a jar and stir. Add the sauteed blueberries and their juices into the jar and stir again until mixed (the oats should be purple.) Let sit overnight and top with fruit of choice!
