One of my best friends in high school was obsessed with Elvis, obsessed. Most every time I got in Devon’s car Elvis’ sultry voice was booming from the stereo, she spewed facts about him not even a Vegas impersonator would know…oh she had one of those come to her birthday party too. Devon even had her own pair of blue suede shoes. She was in love, and it was a love I never understood. I have tried though the years, however, to find a way to share that love…and I think I may have found it, in the form of oatmeal.
Everyone knows Elvis’ favorite food was a peanut butter and banana sandwich. Simple and satisfying, I can’t blame him for it, it’s a solid choice. I decided last night that I was going to make an Elvis inspired overnight oats breakfast. A dedication to the king of rock and to my number one supporter, (No. Not Elvis) Devon. This one’s for you boo!
1 ripe banana
1/3 cup gluten free rolled oats
1/3 cup almond milk (I used my homemade almond milk)
1/3 cup vanilla 0% Greek yogurt
1 tbsp chia seeds
2 tbsp PB2 (peanut butter powder)
1 tsp vanilla
1 tsp cinnamon
Organic honey (sub agave if vegan)
Slice up half of the banana, and save the rest in the fridge. Add all ingredients to a jar and stir until combined. Add the sliced bananas on top and drizzle with honey. Cover the oats and let them sit in the fridge overnight. In the morning uncover and slice the rest of the banana to ass on top. Add almonds if desired and drizzle with more honey.
