I love to cook, don’t get me wrong…but on occasion (when I am ravenously hungry) and don’t have the energy to spend an hour or two in the kitchen, a packaged meal or pizza delivery sounds pretty enticing. I am here to tell you right now, fight that urge! There are plenty of meals you can make that are light on the labor and will save you a buck (and an inch!) Today, after my workout I was in a similar situation. How can I make a meal that packs in the protein but won’t take up my time?-(That I should be spending studying for my chem test tomorrow.) A quick look through my fridge and I realized I had plenty of options for a quick, healthy, and energizing lunch. About ten minutes later and I was sitting down with a nice plate of (sweet) potatoes and eggs! Simple and satisfying!
Sweet Potato Hash with Egg
1 Sweet potato, washed (skin on!)
1 egg, fried
1 tsp EVOO (extra virgin olive oil)
1 tsp garlic powder
1 tsp cumin
Salt and pepper to taste
Roughly chop the sweet potato so you can put it easily into your blender or Cuisinart. Add chopped potato to Cuisinart and pulse until shredded. Be careful not to bend for too long or your potato will turn into a mash!
Add EVOO or coconut oil spray to a pan and heat on medium. Add pulsed sweet potato to pan with olive oil and stir to coat. Season potatoes with garlic powder, cumin, and salt & pepper. Keep stirring and cook until soft.
Add potatoes to a plate. In the same pan spray coconut oil or add a touch more EVOO. Crack an egg and fry until desired. I like runny yolks so I made an over easy egg (flip over after a couple of minutes.) Slide cooked egg onto hash. I also added two slices of nitrate free turkey bacon on the side (Trader Joe’s holla!) There you go! A meal that takes just ten minutes to make but tastes like it took forty.
