Peaches and “Cream” Dream

A few things I love about summer: sun, no school (I’m taking chem so this one is out), vacation, and PEACHES. There is really nothing more satisfying than a juicy summer peach. At Bristol Farms the other day I saw some good looking peaches, and of course I had to get them. Last night I woke up and my last peach was getting pretty ripe; Voila! Peaches and “cream” overnight oats was born. (I like to put the cream in quotes because there is no cream involved, but I promise, you won’t even know it.

Peaches and “Cream” Overnight Oats

1 ripe peach

1/3 cup gluten free rolled oats

1/3 cup almond milk (I used my homemade almond milk)

1/3 cup vanilla 0% Greek yogurt

1 tbs chia seeds

1 tsp vanilla

1 tsp cinnamon

Organic honey (sub agave if vegan)

Raspberries and pecans to top

Take a jar and line the bottom with slices of the fresh peach and sprinkle with cinnamon. Add the oats, milk and yogurt. Stir gently until mixed. Add chia seeds, vanilla, and a drizzle of organic honey, and stir gently again. Top with some more slices of peach and another sprinkle of cinnamon.


You should still have a little less than half of your peach left. (I like to let the peaches sit with the oats overnight instead of just topping them in the morning because the juices of the peach will flavor the oats overnight.)  Close the jar and let it sit overnight in the fridge. In the morning take out the jar and top with fresh raspberries, pecans, and the rest of the peach. I also drizzled a little more honey on top!
