Another afternoon spin class left me in need of a serious protein boost. My tub of Greek yogurt in the fridge was calling my name and my chicken was thawed, lightbulb! I decided to go with a Greek yogurt baked chicken. This protein packed dish tastes like some serious comfort food, but take a guess?…It’s guilt free!
Greek Yogurt Baked Chicken
1 Chicken breast (cut in half to make two thin breasts)
1/2 Cup 0% Greek yogurt
3 Tbs Parmesan cheese
1 garlic clove minced
2 Tsp garlic powder
1 tsp 21 season salute (From Trader Joe’s, optional)
Paprika to sprinkle
Salt and Pepper to season
Preheat oven to 375 degrees, spray a pan with coconut oil spray and set aside.
Cut the chicken breast in half to make two thin breasts, season with salt and pepper, and place in pan. In a bowl mix the Greek yogurt, cheese, garlic, garlic powder, and 21 seasoning salute. Brush the breasts with the yogurt and place in oven for about 25 minutes. Sprinkle paprika on top and enjoy!
