Sunday brunch is my favorite meal in the world, or at least it was when a plate of french toast a side of bacon was a go-to. So many people believe that a diet (although I don’t really like that word) means BORING, but it doesn’t have to! My strawberry shortcake oatmeal proves just that! It’s a yummy and healthy treat that satisfies even the strongest of morning sweet tooth’s. This can’t be good for you…can it?
Strawberry Shortcake Oatmeal
1/2 cup gluten free rolled oats
1 cup water
1/4 tsp cinnamon
1/2 scoop vanilla protein powder
1/4 cup unsweetened almond milk
6 sliced strawberries
I also added some UNSWEETENED shaved coconut on top and a drizzle of honey (if vegan omit)
If you like a sweeter oatmeal you can also add a sprinkle of Stevia.
Put the oats in a bowl with water and cook until absorbed. (I just use the microwave for two minutes and then 30 seconds at a time until cooked, stirring in between) Add the cinnamon while hot. Stir in the protein powder and almond milk. Slice the strawberries on top. Top with coconut shavings if desired and a drizzle of honey.
