Weekend Breaky

I don’t know what it is about the weekend, but whenever it rolls around I find it especially hard to keep on track with healthy eating. With extra free time and more opportunity to dine out with friends it is easy to lose sight of your fitness goals. This morning I woke up craving a traditional American breakfast, unfortunately that can run to a whopping 500 calories or more! I’ll pass. Instead I made a breakfast that looks and tastes almost the same, but it’s all for JUST UNDER 150 CALORIES. Yeah, you read that right. To accompany the pancakes I cooked up a slice of Trader Joe’s uncured turkey bacon (30 calories/piece!) YUM! And of course my morning ritual, a 1/2 grapefruit and a cup of black coffee. That’s a recipe for a GOOD MORNING!

Blissful Banana Pancakes

1 ripe banana

2 whole eggs

sprinkle cinnamon

1 spoonful PB2 (optional)

Mash up the banana and add the two whole eggs, mix until combined, add cinnamon. Heat a skillet with coconut oil spray on medium heat. Add 1/4 cup of ‘batter’ and wait until underside is firm. WARNING: These suckers can be hard to flip. I tilted the pan towards me to get better leverage and slipped the spatula under the sliding pancake. The top will be moist but don’t fret. It also helps to really commit when flipping (I would literally shove the spatula under quickly.)

I added PB2 to my pancakes for a little peanut twist, but feel free to omit. You can also add cacao nibs, pumpkin pie spice, or berries!photo1(3)
